Back to School- Easy Healthy Meals
Now that the kids are heading back to school, it is time to think about preparing healthy meals the whole family can eat that are quick and easy.
Let's start with the all important Breakfast!!! The words fast healthy and breakfast don’t always go hand and hand. But this Chocolate Protein Strawberry Smoothie is both of those things and a crowd pleaser. This one has some bonus protein to keep you going throughout the morning. You will need plain greek yogurt, (Protip: buy the plain to cut down on added sugar and add frozen fruit as your flavor) Frozen Berries, Milk of your choice (I chose unsweetened almond), and protein powder. It only takes a few minutes and you have a breakfast with up to 30 grams of protein! Get full recipe here
Now that you started your day off well, let’s keep it going with a full of flavor lunch. This Cucumber Dill Chicken Salad doesn’t disappoint and you won’t be sad to eat the lunch you packed. You will need grilled chicken (could also use rotisserie), Greek yogurt, celery, cucumber, onion and spices. It comes together quickly and is great on bread, wraps or lettuce.
It doesn't get any easier than this 3 ingredient slow cooker meal.
All you need are chicken breast, taco/fajita seasoning (I love to make my own), and your favorite salsa. You don't even have to thaw out your chicken. And as a bonus you can use this one base recipe for multiple meals. You could make tacos, Mexican rice bowls or even salad with this. Don’t love Mexican or salsa flavor??? Get creative, use BBQ spices, asian spices or even italian spices. Just remember to add some sort of water or broth to keep the chicken moist.
